Resumo:
In this work it was studied the kinetics of drying of pineapple variety Pearl, cut into slices, without stalk,
with a thickness of 0.5 cm in the fixed bed dryer, at temperatures of 70, 60 and 50° C with drying air
velocity of 1.4 m s-1. The mathematical models for Page, Henderson and Lewis & Pabis were adjusted
to the experimental data. It was observed that the studied models fit well to the experimental data and
can be applied in predicting the drying of slices of pineapple, and the best result was found for the
mathematical model of Page.
