Resumo:
The extraction of yam starch was accomplished and the obtained starch was dried by the liofilization
method, resulting in powdered starch. The adsorption isotherms of powder starch at 25, 30, 35, 40 and
45 °C had been determined and the fittings were performed according to the Sigma-Copace, Halsey,
Peleg equations. It was ended that in the extraction process of yam starch, the medium practical
revenue was 18.28%, while the medium revenue, in dried basis, was 68.48%. Regarding to the models
used for the isotherms fitting, Peleg is the best model to represent the experimental data of water
activity of yam starch powder.
