Abstract:
The determination of the moisture content of biological products is essential in studies of the
processes of drying, storage and packaging, since for higher product water activity, it is more prone to
attack by microorganisms. Considering that, this work was carried out to determine the adsorption
isotherms of carrot cubes, at temperatures of 25, 35 and 45 ºC and to adjust to the models of GAB,
Oswin and Peleg. It is concluded that generally all models adjusted satisfactorily to the experimental
data.
