Abstract:
The desorption isotherms of the pumpkin seeds in natura were determined at temperatures of 20, 30
and 40 °C, using the static gravimetric method. The experimental data were fitted by the models of
GAB, Peleg, Oswin and Henderson. The equilibrium moisture decreased with increasing temperature.
The Peleg model was the best fit to the experimental data for temperatures of 30 and 40 °C, showing
coefficients of determination (R2) greater than 0.97 and the lowest average percentage deviation less
than 10%. For a temperature of 20 °C the model that best fit was the GAB, with R2 = 0.9892 and P =
3.48%. The isotherms were classified as type II.
