Resumo:
Apparent viscosities of sword mango pulp in 25 and 30 ºBrix concentrations at 10, 20, 30, 40, 50 and
60 oC was determined. The pulps were extracted from mangos in half ripe state and submitted to
concentration in rotative vacuum evaporator. The viscometric determinations were accomplished in a
Brookfield viscometer, RVT model, in nine rotation speeds: 0.5; 1; 2.5; 5; 10; 20; 30; 50 and 100 rpm.
The pulps showed pseudoplastic behavior and viscosities were reduced with heating in studied
temperature range. The viscosity of the samples to 30 oBrix showed linear correlation with
temperature, with determination coefficient up to 0.8.
