Resumo:
The microorganisms are the main living organisms that synthesize enzymes, confirming the importance of the production and acquisition of enzymes by fermentation processes. The invertase is the enzyme responsible for the formation of the product of hydrolysis of sucrose: the "invert sugar", this product has many applications in the food and beverage industry. One of the most used methods to produce invertase is by solid state fermentation, this process has long been used for their advantageous characteristics in process execution, characteristics that go from its simplicity in operation until the use of renewable substrates agribusiness. The objective of this paper is to review the main aspects involved in the production of invertase by solid state fermentation in the literature. The summary described approaches from major foundations of solid state fermentation, substrates that offer better performance and optimization in process and the microorganisms that are best suited to operation as well as the most satisfactory results in the

The main results in the production of this enzyme demonstrates the efficiency and importance of choosing the appropriate fermentation process where the solid-state fermentation satisfactory not only performs a role in the production of an enzyme of great importance in industry, but also rejecting the establishment of an awareness the ecological process, adding value not only in the use of renewables in the realization of the process, but also in the production of goods and services derived from bioprocesses covering environmental sustainability.
