The sale of fish in open-air markets is of great importance
socioeconomic status in northeastern Brazil, considering that they are the most frequented places
both by the population of a given municipality and by people from localities
surrounding areas, where they acquire food for their subsistence and to support their family,
in addition to being one of the main commercialization spaces, due to the varieties in the form of
presentation of the fish available for sale. The work was carried out through
application of a questionnaire and interviews with fish traders and observation, at least
researcher, with the objective of verifying which fish species are most
marketed, volume of fish sold, ways of presenting the fish,
origin, management, transportation and hygiene in open-air markets in five cities in the state of Paraíba.
The questions asked were about the species traded, commercial price,
origin, volume sold and forms of presentation of fish in the period
studied, between September 2018 and April 2019. 11 species of fish were identified
sold at the fairs analyzed, including shrimp fillet at the Campina Grande fair.
At the end of the research, it was noted that consumers prefer fresh, whole and
eviscerated. The commercialization sites presented precarious management, as the
traders did not wear the necessary uniform or the appropriate tools. Furthermore,
the survey showed that Tilapia (Oreochromis niloticus) is the most consumed fish,
considering that this species is easy to cultivate, quickly reproduces, low cost and high
acceptability. The usual way of presenting the fish was “in natura” sold by the kilo

greater role of public bodies in monitoring and managing hygienic-sanitary conditions
of these fish trading places.
