Goat's milk has become, over the years, a product that appeals to goat farmers. Its derivatives began to be seen as a source of income and was gaining space in the market. Among products derived from goat's milk, cheese occupies a prominent place. Dairy is the goat's milk cheese that has leveraged the income of the goat, whether it be a small, medium or large producer. Consequently, the growth of goat milk cheese production drives agribusiness and boosts the economy of its producers. Considering that in the Northeast there is a greater production of goats, that is, a large part of the Brazilian herd is in this region, it is understood that the production of cheese can be an excellent profit alternative for producers. In this perspective, the objective of this work is, therefore, to analyze the viability of the production and commercialization of goat milk cheese in the city of Sousa, Paraíba, as a way of complementing the income of the small rural owner. Also, techniques adopted for the manufacture of goat's milk cheese were identified, factors that block the development of the activity, the growth of goat breeding in Paraíba and the requirements for the implantation of a goat's cheese factory. The methodology used in this work to detect the commercial viability of this product in Sousa-PB was through a bibliographical research taking as an example cases of success in regions with characteristics similar to those presented by the municipality of Paraíba. It was concluded that the production of goat's milk cheese could be quite feasible if certain incentives were adopted, such as: greater dissemination to the general public of the benefits of consumption of cheeses made with goat's milk; the liberation of bank financing lines for small producers, aiming to foment the beginning of this activity. In addition, it was understood that it is necessary to take into account the adequacy of the rural facilities and the requirements of the inspection bodies, promoting an advertising campaign in order to make it known to the producers. It was also noticed that the Sousenses merchants are practically unaware of the economic potential of this product, since they have not yet introduced it to their stores.
