The 1970s marked the beginning of discussions on environmental problems around the world, with the creation of the first environmental movements and the publication of environmental regulations. From these events, all the problems generated by the action of man became the subject of research and concern about the causes, causes and probable solutions. Several aspects of Environmental Management have created and from them new tools have emerged to minimize the impacts generated by unbridled production. The cleaner production methodology (PML) emerges as an alternative to the other methodologies that have always sought to minimize waste at the end of the process. The study on the principles of cleaner production in the restaurant sector of the city of Sousa allows organizations to gain a deeper understanding of their current environmental situation and the visualization of solutions to the problems identified through research. In this context, the main purpose of the study was to describe how the organizations of the branch of restaurants in Sousa – PB use the principles of cleaner production. The research classified as exploratory and descriptive; as well as technical procedures, such as bibliography and multiple cases, using as a research medium a questionnaire applied to nineteen restaurants located in the city center, and qualitative procedures for analysis and discussion of the data. In the study, among the main evidences, it was possible to observe that none of the organizations has an environmental license. Thus, function specific employees perform 47% of the internal collection, 26% of the organizations carry out the selective collection, 68% of the organizations carry out maintenance planning for the water and sewage networks and 95% of the organizations interviewed believe that the collection and destination process can be improved.
