This dissertation aimed to develop a reference project for small / medium-sized cheese factories, with guidelines for future rural buildings and / or improvements to existing ones in the micro-region of agreste paraibano. The existence of standards in buildings and in the construction materials used was analyzed. From the diagnoses, guidelines were proposed for a low-cost model project, easy access and understanding for the rural producer. The method used was field research, where through three stages of activities the units producing curd cheese were selected and located, as well as the scanning and listing of units registered with Emater or the Secretary of Agriculture. The second stage consisted of on-site visits to the 12 factories. Finally, solutions were proposed following the standards of the regulatory bodies for manufacturing and derivatives. The main results showed that the cheese factories in the region do not have a standardization neither regarding their physical structure, necessary environments, nor regarding processing techniques, and that producers have no knowledge about the building / physical structure of cheese factories. In 75% of the units the construction model used was the nearby cheese factory or the adaptation of an existing environment of the residence. Thus, the results presented are necessary to develop the field and broaden the understanding that cheese factories can modernize and improve without losing their cultural roots.
