Resumen:
The University Restaurant (RU) is an important student assistance facility that, through the
provision of meals, is intended to contribute to students' permanence on campus during the
development of their academic activities. This study aims to analyze the potential and
challenges of the management structure in the University Restaurants of the Federal
University of Campina Grande (UFCG). The study will be carried out at UFCG, which is
currently the only public university in the state of Paraíba that does not have its University
Restaurants managed through an onerous concession, using documentary analysis of files
relating to contracts for the supply of inputs (food, cleaning, gas, water, electricity), labor and
services necessary for the operation of the UFCG University Restaurant, during the period of
2022 and 2023. The information collected was classified using the Stregths, Weakenesses,
Opportunities and Threats Matrix (SWOT) in order to identify the internal aspects (Strengths
and Weaknesses) and the external aspects (Opportunities and Threats) of the mixed
management of UFCG's RUs, regarding internal factors as a strong point, adequate fulfillment
of input demands was observed (foodstuffs, cleaning products and labor), however, the lack
of reports on the costs of the meals served is a weakness. Regarding external aspects, the
change in model adopted for the management of RUs/UFCG and how it threatens possible
resistance to the adoption of this new management model by UFCG Campus managers.
