Resumo:
Zantoxylum rhoifolium (Lam.), popularly known as limãozinho, mamica-de-cadela,
mamica-de-porco, among others, has a high content of bioactive compounds with
antioxidant action, and can meet the new demand of the consumer market. Synthetic
antioxidants have been used by the industry to preserve the nutritional and sensorial
quality of meat products, as they prevent chemical reactions that cause an unpleasant
taste. However, there is a strong tendency to replace synthetic antioxidants with natural
ones, as these ate associated with carcinogenic and mutagenic effects. Therefore, the
objective was to obtain extracts from the leaves of Zanthoxylum rhoifolium (Lam.) to
evaluate their antioxidant potential to this end, the extracts will be obtained by shaking
for 15 minutes at 40°C using 40%, 60% and 80% ethyl alcohol and from these the content
of phenolics, total flavonoids and antioxidant activity will be determined using the FRAP
and ABTS methods.
