This report describes the influence of frequency and moisture content on the dielectric properties of hard winter wheat, Triticum aestivum L., varieties Hussar, Mercia, and Hereward, in the frequency range from 500 kHz to 5 MHz. The results showed that the values of the real and imaginary parts of the complex relative permittivity, 3* = 3' - j3", are extremely dependent on the frequency of the applied field and the moisture content of the product. Values of 3', for all values of moisture content, decreased as frequency increased.
