The investigation was made in EMCAPA, Marilândia, State of Espírito Santo, in 1994. The object of this investigation was study the influence of green fruits in yield of Kouillou coffee. It was used Kouillou coffee with 10, 30 and 50% of green fruits in portion of one thousand and six hundred liters, dried in rotative coffee grain dryer. It was measured weight and volume of coffee fruits, dry coffee and processed coffee. Across this measure it was determined yield and density of Kouillou coffee. Coffee with less green fruits obtains more yield, producing dry coffee with more accumulation of dry matter.
