Resumo:
The present work was carried out with the objective of evaluate the postharvest
fisiologic of guavas ‘Kumagai’ submitted to application of edible coatings of chitosan. The experiment
tested 2 and 6% of chitosan concentrations. The fruits kept storaged at 22ºC and 70%RH during 8
days. The variable studied was weight loss, skin color, pulp firmness, rottenness, respiratory rate and
ethylene prodution. A completely randomized experimental design with 3 treatments and 4 replicates
of 4 fruits was used. Chitosan 6% was different of another reducing weight loss, maintaining skin
color and pulp firmness and difficultting gases permeability. Chitosan 2%, didn’t change guavas
fisiology, showing differently behaviour of chitosan 6%.
