Cinética de secagem da polpa de pitanga formulada.

Abstract

The drying of red brazilian cherry pulp added of emulsifier, stabilizer and thicker agents, in oven with circulation of air, in the temperatures of 50, 60 and 70°C was studied. The experimental results of the drying were fitted by the Page, Lewis and Henderson & Pabis models, used to build the drying slopes. The drying of pulps happened between 250 and 500 minutes. Page model was fitted better to the experimental data, with determination coefficients larger than 0.99.
