Cinética de secagem de manga em fatias.

Abstract

The thin layer drying kinetics of mango slices of sword variety, in temperatures of 50oC and 60oC, using a vertical tray dryer with forced circulation at velocity of air of 3.3 m/s was studied. The drying models of Page, Lewis, logarithmic and two term were fitted to the experimental data of drying kinetics. All the models resulted in reasonable fitting to the experimental data, could be applied to estimate the drying curve of mango slices, with determination coefficients (R2) larger than 0,999 and mean relative deviation modulus smaller than 12%.
