Resumen:
The objective of the work was to characterize mapará (Hypophthalmus eclematus) as
the physical, chemical and microbiological characteristics. The 25 units of Mapará had been
characterized from city of Santarém, the State of Para and carried to the Physical Measures
Laboratory of the State University of Campinas. Microbiological analysis of fecal Coliforms
Salmonella and Staphylococcus aureus was carried through. The physico-chemical
characterizations had been carried through as weight, length, width, thickness, moisture content,
lipids, proteins and ashes. The fish had presented average values of 676.46g, 42.00m, 13.210m and
3.76cm of weight, length, width and thickness, respectively. The average values of the composition
of the fish had been 640% of moisture content, 17.3% lipids, 16.45% proteins and 0.81% ashes.
The microbiological results had proven that the fish were below the limits demanded by the
Brazilian Legislation
