Résumé:
The drying data of the samples of salted pieces of shark muscle (Carcharhinus
limbatus), for three different air conditions and two different air velocities were treated using the
bidimensional explicit finite difference method for the Fick’s second law to obtain effective
diffusivity. The results, whitout shrinkage of sample, were compared with the effective diffusivities
considering unidirectional analytical solution
