Résumé:
The South region, more exactly Canguçu and Pelotas cities in Rio Grande do Sul, has a
great potential in producing small fruits as mulberry, strawberry and blueberry. In the presence of
significant potencial in increasing the local orchards, a mulberry agricultural industry will be
implanted in order to produce yoghurt and jams and in natura consumption as its mean goals. The
process flow chart consists of the following stages: reception, measurement of the primary matter,
washing, selection, in natura consumption or non-pulpy, jam production or refinement, measurement
or closure, label, freezing, storage and dispatch. There have been done calculation of mass balance,
staff logistics and economical analysis of the project. It was budgeted for the equipments and works
along with specialized enterprises, based on CUB, and obtained an investment of R$ 139.474,92. The
economical analysis was done according to the following methods: liquid present value, internal
returnable taxes, Pay-back, applying and interest-rate 15% and TMAR of 12%. We concluded it is a
feasible project which takes approximately tree years and half to return the investment.
