Resumen:
The present works has for the objective the attainment and study the sorption isotherms
behavior of dehydrated coriander stem, in the temperatures of 20, 30 and 40 °C, as well as the
representation of the isotherms for the fit of three mathematic models. The results confirm that the
equilibrium moisture content varying from 0.028 to 0.312 for water activity ranging
from 0.290 to 0.793. It is verified that the model which better represent the behavior of sorption
isotherms of dehydrated coriander stem is the Peleg model with mean relative deviation lower than 6%
e determination coefficient greater than 99%.
