Abstract:
In this work was studied the chive drying in a fixed stream drier, with layer thickness
equal to 2.0 cm and air speed of drying equal to 1.8 m s-1. The mathematical models of Page,
Henderson & Pabis and Logarithm had been adjusted to the experimental data. It is observed that the
studied models present a great adjust to the experimental data, and they can be applied in the
prediction of the chive drying, with the mathematical model of Page presenting the best adjust.
