Resumo:
In this work, the drying process of apple (Malus sp) cultivar Red Delicious was studied.
The experimental procedure was composed drying runs of cilyndrical apple samples in a convective
dryer with perpendicular air flow. With drying data, the respectives effective diffusivity values
(dependent variable) was determined by second Fick’s law solution fit, for each one of the central
composite experimental design runs. This experimental design considered two independent variables
(temperature and air velocity). Only the quadratic effect of temperature was considered no significant
in mathematical model.
