Resumo:
The objective of this work was the analysis of rehydration parameters and process
conditions of dried chicory roots. The knowledge about rehydration of chicory roots is important
because it is a one of the most important source to obtain inulin. The rehydration of dried chicory root
is a linear function of temperature and time and quadratic function of temperature at 90% confidence
level.
