Abstract

The objective of this work was the analysis of rehydration parameters and process conditions of dried chicory roots. The knowledge about rehydration of chicory roots is important because it is a one of the most important source to obtain inulin. The rehydration of dried chicory root is a linear function of temperature and time and quadratic function of temperature at 90% confidence level.
