Resumen:
The work had as objective studies the effects of the hidrotérmic treatment isolated and also
with application the wax of Copernicia cerifera. M, about the commercial qualities fruits of mango
variety Tommy Atkins. The mango fruits were analyzed before the hidrotérmic treatment and to the 6 and
12 days. The following parameters were analyzed: data medium of soluble solids, data medium of loss of
weight of the fruits, data medium of acidity titulável total, data medium data of firmness of the fruits and
appearance of the fruits. It was verified that the hidrotérmico treatment done isolated it accelerated the
weight loss and the degradation the appearance and commercial qualities the fruits. With this procedure
after 12 days maintenance of the good appearance was verified expresses and it interns of the fruits.
