Resumen:
In the food industry, it is common to use artificial mechanisms in order to attract the
attention of consumers, as in the case of artificial coloring agents that improve the
appearance of products. However, frequent consumption can pose risks to human
health. The objective of this research is to describe the impact of the consumption of
artificial colors on human health. To this end, a literature review was carried out through
research where articles, magazines and other periodicals were selected to provide a
theoretical basis. The results based on the six main articles used discussed the
impacts of artificial colors present in foods based on scientific studies that investigate
their relationship with health problems such as allergies, hyperactivity in children and
possible carcinogenic effects, in addition, conditional regulations by bodies were
reviewed. surveillance agencies, such as ANVISA, which seek to control the use of
these substances, establishing limits to guarantee food safety. It was concluded that
there is a need for greater consumer awareness regarding the use of natural foods,
seeking to mitigate potential damage to health.
