Resumo:
The manioc leafs constitute a residue generated in the harvest of manioc roots with
optimum nutritional characteristics. Currently, the interest by vegetal protein occurs from its natural
abundance that in agronomic terms, because the production by hectares, is bigger than the production
of animal and milk protein. With the necessity of giving a suitable employment to the manioc leafs,
techniques of protein extraction to the obtainment of protean essences are being researched to the
employment as an alimentary complement to animals and humans. In this context, this work has as an
objective evaluate five methods of protein extraction quoted by CEREDA and VILPOUX (2003) and
CHAVES (1987). The methods 1, 2 and 5 obtained bigger incomes in the protein extraction, showing
that they are simple and alternative methods to the obtainment of protean essences.
