Abstract:
The objective of this work was to evaluate the quality of goat's milk in different orders of
delivery (first, second and third or more calving). The work was carried out at the Várzea Nova farm, 15 samples of 300 ml of milk were collected, five samples of each treatment. The physical-chemical analyzes were developed in the LTA Food Technology Laboratory, in the apparatus; Complete Ultrasonic Milk Analyzer - AKSO and LACTOSCAN® Somatic Cells Counter. When we evaluated the variables fat, SNG, protein and salts did not hear significant difference between them. However, the results found for SNG were 8.6; 9.41 and 9.53 for first, second and third parities, for protein 3.17; 3.45 and 3.49 and salts 0.71; 0.77; 0.78 respectively, all results are within the required by the IN 37. For fat we found results of 2.52; 3.41 and 2.69 for the first second and third calving, respectively. Only the milk of second lactating animals was within the range recommended by IN 37. With this work we can conclude that the animals in the second calving showed better results for fat content and CCS; the animals in the third or higher calving had better results for NGN, lactose protein and salts and that no milk sample evaluated in this study showed water or solute addition.
