Resumo:
The present work has the objective of analyzing the risks with the help of the FMEA tool and the contribution of the Pareto chart in a gourmet hamburger located in the city of Sumé - PB where it is inserted in the branch of food service. Bibliographic researches were carried out on the FMEA tool and on-site visits to understand the general process of the company. The FMEA methodology was used to identify, in the three main stages of the process (order execution, order processing and order delivery), faults, failure modes, effects and risks, with the objective of eliminating or reducing them. Based on the results obtained, a plan of action was created to solve the problems with higher RPN indices using practical and feasible solutions. Taking into account the results obtained and expressed, it can be stated that the objectives defined in the research were achieved.
