With the prospect of developing economically, companies seek to conquer new markets and customers, launching new products or services in a shorter time, with less cost and with quality. Project management is carried out in stages, such as starting, planning, executing, controlling and closing, so that your processes develop in a gradual and logical manner, with a view to meeting deadlines. Faced with this, the object of study is the Ipueira sugar mill, an agro-industry that has been active in the market since 1878. This study aims to develop a planning for the development of an aged cachaça in oak barrels. To achieve this goal, a market research was conducted with ten multiple choice questions applied to ninety consumers, a SWOT analysis that facilitated the visualization of the corporate and external environment, diagnosing their strengths, weaknesses, opportunities and threats. As well, the PMBOK guide was used to plan all the steps and the Software Open Project was used to generate the Gantt chart, allowing to illustrate the progress of the different stages of a project and the time intervals representing the beginning, end and precedence of each activity. The planning of the new cachaça provided a broad approach that was able to gather the indispensable factors to guarantee a solid position in the scenario in which the organization operates.
