The invertase or β-D-fructofuranosidase is the main enzyme used in industry for the
hydrolysis of sucrose and for obtaining invert sugar syrup. One of the methods used for
invertase production is by solid-state fermentation (SSF), therefore, this work aims the
production and evaluation of the enzyme invertase activity synthesized by the
filamentous fungus Aspergillus niger IOC 4003, by solid state fermentation. The
inoculum used in the process was a solution of water with potato and glucose, and the
substrate used for the SSF was the passion fruit shell powder. Fermentation occurred in
flasks containing the culture medium inoculated with the chosen substrate, where the
whole process was maintained under incubation at 28 °C. The fermentation period was
seven days, every 24 hours a sample of the fermentation broth was separated from the
other samples, then the analysis of the broth was carried. Were determined invertase
activity levels during the fermentation, the percentage humidity of the substrate, the
variation of pH in the fermented broth, substrate consumption, and the concentration of
proteins in the enzymatics samples by the Bradford method. The invertase production
by Aspergillus niger IOC 4003 was satisfactory for solid-state fermentation. It can also
be noted that the invertase activity levels were increasing during fermentation, and these
activity levels were directly proportional to the quantities of proteins found in the
enzymatic extract for each day of fermentation. The pH values remained at normal
levels for the growth of fungus, which enabled the production of the enzyme. The
production of enzymes by solid state fermentation is an affordable alternative in terms
of sustainability and economic viability, turning organic waste into the desired product.
