The goat has been developing in recent years in the world including Brazil, where the Northeast has a considerable herd on the national scenery, and along with this development also increases the search for a quality milk. This paper aims, educate farmers of the importance of sanitation in the milking of goat milk from the use of a sanitation kit and performance of physical-chemical analysis. The milk was collected from two CaririParaibano properties, in these two properties were maden two collections, one to follow the procedures used by the producer and other after realization of hygienic milking, the samples of the properties were kept under refrigeration for a period of different time from each other. The Milk of property A was kept in refrigeration for about 24 h, until the day of analysis, whereas the property B was 45 to 60 days approximately, also until the realization of the analysis. Nevertheles we can conclude that from the data obtained in this study can be afirmed that the improvement in the values of sanitized samples of both properties were not the type of feed management or the difference of races, but the differentiation of time that samples spent cooling and especially the practice of sanitation at milking, according to the observed in this study was probably that influenced the differentiation of the samples, since the sanitation at milking is an important factor in terms of milk quality so as to obtain a quality milk, the use and adoption of sanitation practices in milking is essential.
