Companies seek every day to produce products with higher quality, however, with least possible loss of time, resources and costs. Thus, statistical process emerges as an important tool for the control process that analyzes and interprets data in order to, if necessary, to indicate when the process needs improvement. Given the above, this work has the objective to identify the main causes of variability of strawberry yogurt weight 180g, from the use of statistical quality control tools. Were drafted the flow chart and the histogram, which assisted in the description of the process which can be observed that the process was unable to produce according to the specification limits. Applying the control chart for the month of August, it was found that there were two points on alert, however, that these data are considered tentative limits, ie limits within which the process is capable of meeting the specification imposed over the months analyzed, the chart had to be recalculated for that withdrew the warning points. Thus, the graph was under control, given the conditions of specification limits, but when compared with the limits of the months of September some points left extreme. In the month of October there were several points that distanced themselves increasingly these limits, and even suggested new tentative limits for the process to be able to meet the specifications, this was not possible. It was suggested new specification limits for the process and it was found that with them it was able to make this possible it is necessary to analyze causes of the particular process performed by the use of cause and effect diagram, in order to eliminate them, thus making the process under control.
