Qualidade da carcaça e da carne de ovinos em confinamento alimentados com diferentes níveis de inclusão de feno de Jurema preta (Mimosa tenuiflora (WILD.) (POIR.)

Abstract

The study evaluated the quality of the carcass and the meat of confined sheep fed with different levels of inclusion of jurema Preta (Mimosa tenuiflora (WILD.) (POIR.) hay(FJP). Twenty-four crossbred Santa Inês uncastrated male sheep were used, with initial weight of 27.25 ± 3.32 kg, in a confinement system and submitted to four treatments with jurema preta (Mimosa tenuiflora (WILD.) (POIR.) hay (FJP): T1 (0.0%), T2 (12.5%), T3 (25.0%) and T4 (37.5%), with voluminous:concentrate ratio of 50:50, and isoprotein and isoenergetic diets. The design was completely randomized with 6 blocks and 4 treatments. External morphometry of the carcass and internal half carcass, regional and tissue composition of the leg and loin and quality of the meat of the loin were evaluated. There was no effect of the inclusion of FJP on the external morphometry of the carcass, in the internal morphometry there was an increasing linear effect on the depth of the thorax. In the regional composition, the weights of the cuts were not influenced, already in the yield of the cuts there was a linear effect decreasing in the yield of the palette and increasing linear effect of the thorax. The tissue composition of the left leg had an increasing linear effect on subcutaneous fat (g) and total fat (g) and (%), and linear decreasing on RMG and ROG. In the objective evaluation (AOL, EGS and GR) and subjective (color, texture and mammary) of the Longissimus dorsi muscle in the cold half carcass, there was no effect of FJP inclusion levels. In the tissue composition of the loin, there was a linear effect increasing in the total fat (%) and linear decreasing in the RMG. And in the evaluation of meat quality, there was no effect of FJP on the variables tested (color, PPC, CRA and FC). Demonstrating that the inclusion of jurema Preta (Mimosa tenuiflora (WILD.) (POIR.) did not change the tissue composition, regional and maintained the meat quality, being able to be used up to the level of 37.5% depending on the amount of jurema Preta (Mimosa tenuiflora (WILD.) (POIR.) available, cheapening the diet and consequently the production of sheep meat for the producer.
