Salmonella is the main pathogen responsible for Foodborne Diseases (DTA) in the world and its occurrence grows significantly, food based on chicken, pork and eggs are the main carriers of this organism. It has as reservoir the intestinal tract of man and animals, its manifestations are salmonellosis, typhoid fever and paratyphoid fever with varied incubation time. Despite the implementation of programs that help protect and promote health, cases of food poisoning are numerous, often in the form of outbreaks. In view of the above, this work aimed to carry out a systematic review of the literature about DTA with Salmonella spp. The study was carried out through the available access via online databases and in the library collection of the Federal University of Campina Grande, Campus de Cuité - PB (UFCG). The research was done in the databases, Lilacs, Medline, Pubmed, Scielo, Google Scholar and national and international health committees with the following terms isolated or in combination: Salmonella spp., Food poisoning, salmonellosis, DTA and biofilms being used publications of the last eight years. According to the results found, the study warns of the incidence and outbreaks of DTA worldwide, along with inappropriate use of antimicrobials. Public health control, prevention and promotion measures are necessary along with the rational use of antimicrobials in order to achieve therapeutic success.
