Resumen:
This work was carried out with the objective of analyzing the logistics in the productive process of the fruit pulp agroindustry in the city of Lagoa Seca, PB, identifying its phases and the production of residues, as well as diagnosing the environmental impacts caused by the waste generated by the agroindustry. This research has a descriptive character, with data collection through interviews and a check list with 98 items of verification adapted and based on RDC / ANVISA nº 275 that provides on the Technical Regulation of Standard Operating Procedures applied to Food Producing / Industrializing Establishments and the Checklist of Good Manufacturing Practices in Food Producing / Industrializing Establishments and in the Good Agricultural Practices Manual and HACCP System. The data were analyzed by categorization in groups according to the percentage of adequacy of the items, being, Group 1 with 70 to 100% of items attendance (satisfactory), Group 2 with 51 to 75% (regular) and Group 3 of 0 to 50% of the items served (unsatisfactory). Applying the check list with 98 items, it was verified that 79.6% of the evaluated items are adequate according to RDC / ANVISA no. 275, and the production of fruit pulp is considered satisfactory. For the production of pulp a thousand liters of water are used daily, including the hygienization of the environment, producing one thousand liters of wastewater / day, estimating an expenditure of 252 thousand liters of wastewater per year. The solid waste generated is directed to correct disposal, not generating environmental impacts.
