Résumé:
Adequate and healthy food is a basic human right to any individual and must be guaranteed through the development of public policies. In this sense, the National School Feeding Program contributes to this right, through the provision of school meals, which should be adequate for each category of education. It is essential to follow the dietary profile of the menus in order to find out if there are any possible inadequacies, considering that the program has certain fragilities. Therefore, the objective was to evaluate and compare the menus of a public school in the city of Jaçanã, Rio Grande do Norte, according to the National School Feeding Program, for daycare, preschool and elementary school students. In order to do so, the menus and technical data sheets were prepared from April to September, where they were analyzed quantitatively according to energy, macronutrients (carbohydrates, proteins and lipids), micronutrients (Calcium, Iron, Magnesium and Zinc, Vitamins A and C), and fibers. Then counted the monthly frequency. The obtained data were tabulated and stored in electronic spreadsheets. Results were expressed as mean and standard deviation. The verification of the adequacy of the monthly average with the values established by the PNAE was analyzed with a margin of 10% for more and for less. The results showed inadequacies among the analyzed nutrients in the different categories of education. It should be noted that the fibers were lower than those recommended by the program in all categories of education and in all months of analysis. Considering the results obtained in the present study, it is observed that the menus were not in agreement with the values established in the teaching categories, at different moments, and with great frequency. It is suggested that a differentiation of the per capita determination be made between the age groups / categories of education, in order to get closer to the established values. Another point is to review the amount of nutritionist, which is below the recommended number of students.
