With the passage of time and with evolution, the human being underwent several changes, among them in food. In the pursuit of practicality went to opt for ready foods, like processed and ultra processed that contain chemical additives like dyes, added to foods have caused some adverse effects mainly on children. With this, the present work aims to carry out a literary research about the effects caused by the consumption of food chains in childhood. This is an integrative review that used scientific theses and articles researched in the Google academic database between 2007 and 2018, as a study instrument. Sixteen papers were used, including 9 scientific articles and 7 theses. The results show that in the years of 2012, 2015 and 2016 were the years with the greatest number of published works of this theme with 16% each. Regarding the type of study, the bibliographic review was the one that stood out with 29% of the published articles. Based on data analysis, it has been observed that children are exposed to foods containing food additives as dyes too early, and that various foods consumed by them contain colorants, which causes most to exceed acceptable daily intake (ADI), and may cause various adverse effects such as allergies, hyperactivity, insomnia, respiratory problems, among others, including long-term cancer. These effects are alarming and, therefore, it is necessary to carry out more extensive studies involving the subject to obtain more precise information to be shared and intervention measures by competent organs in the health area with actions of nutritional education.
