Resumen:
Concerned with a constant ongoing improvement search of its services and customers satisfaction, feeding units started investing in quality management tools aiming to get aid in the intervention, resolution and failure prevention that compromise food security and contribute for a development of sanitary risk in these establishments. This study aimed to search scientific evidences about the application existence of quality management tools in meals productive establishments for healthy and ill collectivities. It is an integrative review of scientific literature performed in the period of February to July, 2018, through Pubmed, Medline, Lilacs, Google Scholar and SciELO databases. From the total publications found between the years 2006 and 2018, only 17 studies were selected to perform this research, the following keywords were used: “Quality Management”; “Feeding Units”; “Quality Control”; “Quality Tools” and “Hospital Nutrition Service”. Based in the selected articles, it was observed the elaboration necessity of quality management related studies in food production enterprises in a wider way, since the still restrictive scientific articles number to this topic applied in these work environments, especially in hospital feeding services. Moreover, it was verified the several acquired benefits from the tools application in production fields that were performed its implementation. Based in the studies, it was found that the literature shows that the insertion of these management tools in these venues, considerably improves the evaluated indexes, acting efficiently in troubleshooting and ongoing improvement of productive processes.
