Brazil is considered one of the most food-wasting countries in the world. Food waste in a Food and Nutrition Unit (UAN) is synonymous with a lack of standardization of food pre-processing steps. One strategy to avoid these losses would be the training of the work team, the standardization of the preparation techniques, as well as the standardization of the home measures. The elaboration of this work was due to the lack of catalogs of home measurements with specific photos for the food groups of cereals, legumes, oils, milks and derivatives. The present work was a descriptive study with direct observation, performed at the Dietetic Technique Laboratory of the Federal University of Campina Grande, Paraíba, Brazil. We analyzed 95 samples, 14 milk varieties and derivatives, 8 types of oils and fats, 51 cereals and 22 legumes most consumed by the regional population. The foods were evaluated in triplicate and tabulated using a Microsoft Excel 2010 worksheet to obtain the means and the standard deviation, in addition, all foods were photographed with their respective home measurements. It was found that, the foods derived from milk like condensed milk had a greater weight when compared to the values described in the literature. It is also possible to observe a difference in the densities between liquid fats, such as bottle butter and vegetable oils, when contrasted to the same extent. It is concluded that the research reached the proposed objectives, however, it is considered relevant that there be more studies on home measures, as well as the creation of new regional catalogs, aiming at reaching both professionals and the population in general.
