Entrepreneurship has long been studied because of its important role in social, personal, economic development and also because it is a broad field of study that aims to generate new opportunities, products and services. The teaching process for the development of the entrepreneur profile of the graduate in the area of health goes beyond the theoretical knowledge of the subject, must be a construction of skills and attitudes that make up the entrepreneur. Environmental conditions conducive to development need entrepreneurs who take advantage of them and who, through their leadership, capacity and profile, coordinate the development process, especially in the area of health, the entrepreneur creates and determines values for individuals and society in the Field. This study aimed to know the entrepreneurial profile of the undergraduate students of the nutrition course and their opinion on the subject, observing how the academic formation contributes to the formation of the entrepreneurial profile. It is a study of a predominantly qualitative nature methodologically based on dialectical historical materialism. The research carried out with undergraduate students of the course of nutrition in the sixth and seventh periods, Federal University of Campina Grande in Cuité, Paraíba. After the data collection, the empirical material analysis was started by the discourse analysis technique proposed by Fiorin. In this context, based on the existing contradictions, it was possible to arrive at the essence of the concrete thought, visualizing five categories: Entrepreneurship Concept, Characteristics of the Entrepreneurial Profile, Influence of Graduation in Entrepreneurial Profile, Positive Vision of the Labor Market and Entrepreneurship in Graduation. This study made it possible to know the entrepreneurial profile of the undergraduate students in the health area specifically the undergraduate students of the nutrition course in the sixth and seventh periods, elucidating the opinion of the undergraduate students about nutrition and how the academic training contributes to the graduation profile. This study made it possible to elucidate the importance of an active entrepreneurial education in higher education institutions, shaping the potential characteristics of potential
entrepreneurs and allowing broad discussions to the graduating to, as a professional, to opt critically for the opportunities of the labor Market.
