The consumption of tropical fruits and the generation of solid residues in the processing, made important in the production of new products that fit the needs of the consumer, as well as the alternatives for the integral processing of the food, its inedible parts as the leaves, stems , shells, weeds and seeds. The mango is known to have high nutritional value, and is widely used in the process of manufacturing products such as pulp, ice cream, among others. In this process, there is a large volume of waste that is discarded. Taking into consideration the importance of developing new products and the search for alternative sources of nutrients for use in foods that are more accessible to the general population, this study aimed to use solid mango residue in the preparation of different cereal bar formulations and evaluate its antioxidant potential and its sensory characteristics, as an alternative to reduce the impact of waste on the environment, reducing waste and taking advantage of parts of foods rich in nutrients. Thus, the different formulations of cereal bars (BCP, BM20% and BM30%) were balanced. Analyzes of bioactive compounds for phenolic and flavonoid compounds, antioxidant activity (ABTS and FRAP) and sensory analysis were carried out using the capacity test and purchase intention. "The results obtained were a possibility of using wheat flour in the bioactive mangoes as an indicator of 5% for 1785 mg of AGE / 100 g, total flavonoids of 27.96 to 47.9 mg / 100g and antioxidant activity of 1 , 88 to 41.28 μmol TE / g for ABTS and 0.08-0.37 μmol TE / g for FRAP, as well as cereal bars obtained good sensory acceptance, with acceptance rates between 76 and 86%. You can conclude from the results obtained, that the cereal bars have reached a good level of global acceptance with possibilities of market insertion, besides important factors of payment of biological offers in formulations, excellent for the human right, offering health benefits.
