Some studies show an increase in diseases related to nutritional imbalance, which has generated an increase in demand for seeking nutritional clinic. From the nutritional clinical care growth, you need to assess the quality of care. In this context, one of the tools to monitor the quality of service is the use of indicators, seeking access, efficiency, reliability and completeness of work processes and results, and is thus a valuable practice for evaluation of health services. After review of the literature on the subject, structuring the survey was carried out "Assessment Tool outpatient Improved Nutrition". During the construction of the questionnaire, the main factors that would provide subsidies to quality health services were considered, and that fit responsiveness concept for Nutrition. Then there was a semantic validation aiming to verify the understanding of the questionnaire, as an indicator should be based on the user's understanding when expressed your opinion about the service you receive. In nutrition, there is still no control of the quality of care for that an evaluation process able to identify the structure, the process and the result of nutritional work is needed. This study aimed to produce a reviewer indicator of outpatient quality, making possible its use for organizing strategies, better scale the staff, manage physical, material and economic in search of better quality standards.
