Résumé:
The increasing integration of women in the labor market has meant that mothers seek educational institutions for permanence of their children during their absence at home. In this sense, daycare centers emerge as institutions responsible for receiving these children in their early years, where they spend much of their time and make most of their meals, resulting in a bigger attention regarding to the food offered there. Objective: This study aimed to diagnose the sanitary conditions of a public daycare from the application of the checklist tool. Methodology: This was a cross-sectional, observational, qualitative and quantitative study conducted in September 2015 in a public daycare, using for diagnosing the CECANE/FNDE software that determines the health risk and points out nonconformities to application of corrective action plans through the 5W1H tool. Results: The results showed only 34.21% conformity, which brings about a high health risk for its users, with severe impairment in the areas of manipulators, processing and production. Conclusion: The data infer that the unit requires interventions in the short, medium and long term to address the nonconformities presented, being the professional nutritionist, as head coach for the service, the only one able to change this situation enabling the appropriateness of the service.
