The goat herd is growing in Brazil every year, this growth is due to several factors such as; climate change we know from other species migrate to the goat because of the ease of animals to adapt to various climates and growth in meat consumption and derived from this animal. It may be noted that the growing domestic market demand in purchasing meat products from goats, is also raising concern about the microbiological quality with that food rich in nutrients reaches the consumer's table. The objective of this study was to survey the main causative agents of Foodborne Diseases, the ways in which they are conveyed to food, the factors that influence the contamination and what these cause pathogens in the body of humans consume. Escherichia coli is one of the key players identified as Foodborne Diseases outbreaks of provocative, together with Salmonella spp. cause damage to the digestive system, that due to food contamination degree can lead the individual to death. The very factors of goat meat that facilitate and help or bacterial growth when a fault occurs during the manipulation of the animal were demonstrated, either at slaughter, storage, transport or marketing.
