In recent years, consumers have been looking for better quality of food products, requiring the market to demand these new requirements. In this context, the reality of municipal slaughterhouses does not respect these perspectives, where they often do not offer sanitary conditions, satisfactory physical and work safety structures, imposing constant risks to public health, especially meat consumers. The objective of this study was to evaluate the current situation of municipal slaughterhouses in relation to the implementation of the food safety guarantee. Eight municipal slaughterhouses established and operating in the states of Paraíba, Rio Grande do Norte, Ceará and Pernambuco were quantified. The aspects related to: identification and characterization of these slaughterhouses, the professional interviewed, the level of information, knowledge and concern about food safety assurance of technical manager, general conditions and adjustments as to the quality management tools in municipal slaughterhouses, with the primary purpose of investigating the conformities and non-conformities related to its implementatio, were investigated through questionnaire and on-site visits. Therefore, a checklist based on Resolution RDC no. 275 of ANVISA / MS was used as the evaluation criterion, and being classified in group I (low risk), II (medium risk) and III (high risk). The results show that most of those responsibles have no knowledge of basic and mandatory tools of food safety, demonstrating lack of preparation. Of the eight slaughterhouses, only two are ranked as medium risk, that is, 51 and 75% of adjustments, the others were classified as high risk. Thus, we see that the improvement of the organization in the beef chain is essential in order to ensure the safety of that food.
