Abstract:
Contamination of food has become a relevant topic for the moment,
since many foods are consumed in natura, such as fruits, vegetables and
vegetables, and need to be studied the real microbiological and parasitological
situations of these foods, so that the final consumer does not suffer With
possible pathologies, including serious infections, that may arise from the
consumption of contaminated food. In this context, the objective of this work
was to evaluate the microbiological and parasitological profile in lettuces of the
municipalities of Teixeira and Patos in the Paraíba hinterland. Microbiological
and parasitological analyzes were carried out on 30 lettuce samples (Lactuca
sativa), 15 of which were collected on rural properties in the municipality of
Teixeira and 15 in the municipality of Patos. From this total, it was found that
40% (6) of the lettuce samples collected in the municipality of Teixeira were at
unsatisfactory levels, while in the municipality of Patos 80% (12) were
satisfactory to consumption according to Resolution - RDC No. 12 Of January 2,
2001 of the National Agency of Sanitary Surveillance - ANVISA, which
recommends raw vegetables, prepared for direct consumption, can not contain
Salmonella spp / 25g of the product and thermotolerant Coliforms above 10²
CFU / g. Samples from both municipalities presented immature forms of
nematodes and protozoa and it was found that the lettuce samples were
contaminated by structures of parasites of dogs such as Toxocara spp. and
Ancylostoma spp. and protozoa such as Giardia and Toxoplasma. Further
studies are needed to track the entire production system, consisting of
analyzing the quality of the water used for irrigation, the amount of inputs
(organic matter), hygiene and the orientation of the manipulators.
