Resumo:
The catolé coconut is a foodstuffs appreciates at Brazilian‟s northeastern semiarid especially because their organoleptic proprieties, however with little used industrially. There are few research about this fruit, which aroused interest in conduce this experiment, wherein the objective is obtain catolé coconut characteristics and to allow industrial processing line. Therefore, this experiment goal was to suit a industrial processing line for catolé coconut with machine development that could pelling, clean, brake and separate almonds. For this, physic proprieties from the fruit in natura, after remove pulp and fiber, were obtained, the fragments and almonds resulted from brake, even as aerodynamic proprieties, terminal velocity and drag coefficient. Compression stress evaluations were made to measure the necessary effort by compression machine. At the end of this experiment, all physics proprieties necessary for the foodstuff were obtained and, a efficient machine was developed to clean and peel and removal of pulp fibers, With a process time of 15 and 25 min respectively, as well as the determination of aerodynamics proprieties necessary for a machine development who can do the almonds separation without mechanical damage by shell fragment or impurities. This separation is possible using the terminal velocity, whereas this experiment stage showed that the terminal velocity obtained by the almonds was 13.2% more than the terminal velocity obtained by the shell fragment.
