Resumen:
Celiac disease (CD) is an autoimune and is characterized by inflammatory lesions in the mucosa of small intestine, induced by the ingestion of gluten, the only treatment is total removal of gluten from the diet. Today, the market offers several gluten free products in order to meet this need and ensure a better quality of life for patients with DC. As a result, this work it is a survey of the availability of these products in the municipality of Cuité/PB in supermarkets of medium and small sized, also aiming to analyze food labels classified as forbidden and permitted for celiacs, according to the law in effect. As for the results, it was identified that the supermarkets Cuité/PB does not sell any kind of differentiated food to the bearer of Celiac Disease. And with regard to the adequacy of nutrition labels was observed that in all establishments there are products that somehow does not comply with the law, or by the absence of label, labels erased, illegible, as is also found naturally gluten-free products that have been contaminated in the manufacturing process. Given the above, it is concluded that supermarkets in the municipality of Cuité / PB are not prepared to meet the needs of patients with DC and the food industry has been concerned little with what's available in the market in terms of labeling.
